  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
  3. In another bowl, mix the sugars, pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. In a separate bowl, beat the softened cream cheese until smooth.
  6. Fill the muffin liners halfway with batter, add a spoonful of cream cheese mixture, and then top with more batter.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Let cool before serving.
