  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

  • 1/2 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 4 tablespoons cream cheese, softened
  • 1 tablespoon milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the pumpkin puree, butter, and sugar until well combined.
  3. Beat in the eggs and vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the pumpkin mixture, mixing until just combined.
  6. Drop spoonfuls of the batter onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the edges are golden.
  8. Allow to cool completely.
  9. For the filling, beat together the cream cheese, powdered sugar, and milk until smooth.
  10. Spread the filling on the flat side of one cookie and top with another to make a sandwich.
