Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, salt, and nutmeg.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour the batter into a greased muffin tin, filling each cup about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow to cool before serving.
