  • 1 cup pumpkin puree
  • 2 eggs
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the cottage cheese, pumpkin puree, eggs, brown sugar, and maple syrup until well combined.
  3. In another bowl, whisk together the flour, baking powder, pumpkin spice, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in chopped walnuts if using.
  5. Grease a muffin tin and fill each cup about 3/4 full with the batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cool slightly before removing from the tin.

Notes

  • For a sweeter muffin, increase the brown sugar to 3/4 cup.
  • You can substitute half of the all-purpose flour with whole wheat flour for a healthier option.
