- 1 cup pumpkin puree
- 2 eggs
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon pumpkin spice
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts (optional)
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the cottage cheese, pumpkin puree, eggs, brown sugar, and maple syrup until well combined.
- In another bowl, whisk together the flour, baking powder, pumpkin spice, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in chopped walnuts if using.
- Grease a muffin tin and fill each cup about 3/4 full with the batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool slightly before removing from the tin.
Notes
- For a sweeter muffin, increase the brown sugar to 3/4 cup.
