  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ginger
  • 1 cup sugar
  • 1 cup pumpkin puree
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 4 oz cream cheese
  • 2 cups powdered sugar
  • 1 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, mix the sugar, pumpkin puree, eggs, vegetable oil, and vanilla until well combined.
  4. Add the dry ingredients to the wet ingredients and stir until just combined.
  5. Fill the muffin tin with the batter, about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the muffins cool, prepare the frosting by beating the cream cheese, powdered sugar, and milk until smooth.
  8. Frost the cooled muffins with the cream cheese frosting.

Notes

  • For a spicier muffin, add more cinnamon or even a dash of clove.
  • Store any leftovers in an airtight container.
