Roasted Sweet Potato Soup

Ingredients

  • 3 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 cup coconut milk

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and chop the sweet potatoes, then toss with olive oil, salt, and pepper.
  3. Spread on a baking sheet and roast for 25-30 minutes until tender.
  4. In a large pot, sauté onion and garlic until soft.
  5. Add the roasted sweet potatoes, vegetable broth, cumin, and cayenne.
  6. Bring to a boil, then simmer for 10-15 minutes.
  7. Blend the soup until smooth, then stir in coconut milk.
