  • 2 cups pumpkin puree
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups vegetable broth
  • 1 cup chopped onion

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix olive oil, garlic powder, thyme, rosemary, salt, and pepper.
  3. Rub the mixture all over the turkey.
  4. Place the turkey in a roasting pan and add vegetable broth and chopped onion.
  5. Roast the turkey for about 2 hours, basting occasionally.
  6. In the last 30 minutes, add pumpkin puree to the pan and continue roasting.
  7. Once cooked, let the turkey rest before carving.
