Sheet Pan Lemon Balsamic Chicken and Potatoes

A delicious and easy recipe for sheet pan lemon balsamic chicken and potatoes.

Ingredients

  • 4 chicken thighs
  • 1 pound baby potatoes
  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 lemons, juiced and zested
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine balsamic vinegar, olive oil, lemon juice and zest, minced garlic, rosemary, thyme, salt, and pepper.
  3. Add chicken thighs to the marinade and coat them well.
  4. Place the chicken and baby potatoes on a sheet pan.
  5. Roast in the oven for 35-40 minutes, or until chicken is cooked through and potatoes are tender.
  6. Serve hot and enjoy!

Notes

  • For a little more flavor, marinate the chicken for a few hours before cooking.
  • This recipe can easily be doubled for larger gatherings.
