- 2 medium spaghetti squashes
- 1 pound boneless, skinless chicken breast, cooked and shredded
- 1 cup low-fat cream cheese
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squashes in half lengthwise and scoop out the seeds.
- Place the squash halves cut side down on a baking sheet and roast for 30-40 minutes or until tender.
- In a large bowl, mix the cooked chicken, cream cheese, chicken broth, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper until well combined.
- Once the squash is cooked, use a fork to scrape out the strands and add them to the chicken mixture.
