Slow-Braised Beef Roast with Cranberry Balsamic Glaze

  • 3 pounds beef chuck roast
  • 1 cup cranberry juice
  • 1/2 cup balsamic vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup beef broth

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the beef roast with salt, pepper, garlic powder, and onion powder.
  3. In a large skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
  4. In a bowl, mix together cranberry juice, balsamic vinegar, brown sugar, and Worcestershire sauce.
  5. Place the seared roast in a roasting pan and pour the glaze mixture over it. Add beef broth to the pan.
  6. Cover the roasting pan with foil and place it in the oven. Braise for 3-4 hours until tender.
  7. Remove from the oven, let sit for 10 minutes, then slice and serve.

Notes

  • For extra flavor, marinate the beef overnight in the glaze.
  • Serve with mashed potatoes or roasted vegetables.
