Smashed Egg Toasts with Herby Lemon Yogurt

A delicious and unique take on egg toast that is perfect for breakfast or brunch.

Ingredients

  • 2 large eggs
  • 2 slices whole grain bread
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Bring a pot of water to a boil and carefully add the eggs. Boil for 7-8 minutes for medium softness.
  2. While the eggs are cooking, toast the bread until golden brown.
  3. In a bowl, mix the Greek yogurt, lemon juice, parsley, dill, salt, and pepper together.
  4. Once the eggs are done, peel and gently smash them on top of the toasted bread.
  5. Spread the herby lemon yogurt over the smashed eggs and season with additional salt and pepper if desired.
  6. Serve immediately and enjoy!
