Smashed Potatoes with Garlic and Herbs

  • 2 pounds small potatoes
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes.
  3. Drain the potatoes and let them cool slightly.
  4. Place the potatoes on a baking sheet and gently smash each one with a fork.
  5. In a small bowl, mix together the olive oil, minced garlic, rosemary, thyme, salt, and pepper.
  6. Brush the garlic-herb oil mixture over the smashed potatoes.
  7. Bake in the oven for 25-30 minutes, or until golden brown and crispy.
  8. Serve warm and enjoy!

  • For extra crispiness, broil the potatoes for a few minutes at the end.
