  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 medium onion, chopped

  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add chicken thighs and sear until golden brown on both sides.
  3. Remove chicken and set aside. In the same skillet, add onion and garlic and sauté until translucent.
  4. Stir in rice, paprika, salt, black pepper, and cayenne pepper.
  5. Pour in the chicken broth and bring to a simmer.
  6. Return the chicken to the skillet, cover, and reduce heat to low. Cook for 25-30 minutes or until the rice is cooked and chicken is tender.
