Soft Chewy Pumpkin Oatmeal Cookies Maple Frosting

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup maple syrup
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  3. Beat in the pumpkin puree, eggs, and vanilla extract until well combined.
  4. In another bowl, mix together the rolled oats, flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop spoonfuls of dough onto a prepared baking sheet.
  7. Bake for about 12-15 minutes, or until the edges are golden.
  8. Meanwhile, in a bowl, mix together the maple syrup and powdered sugar to make the frosting.
  9. Once cookies are cooled, spread the maple frosting on top of each cookie.

Notes

  • For best results, chill the dough for 30 minutes before baking.
