- 1 cup pumpkin puree
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups rolled oats
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup maple syrup
- 2 cups powdered sugar
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
- Beat in the pumpkin puree, eggs, and vanilla extract until well combined.
- In another bowl, mix together the rolled oats, flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop spoonfuls of dough onto a prepared baking sheet.
- Bake for about 12-15 minutes, or until the edges are golden.
- Meanwhile, in a bowl, mix together the maple syrup and powdered sugar to make the frosting.
- Once cookies are cooled, spread the maple frosting on top of each cookie.
