- 1 pound cavatappi pasta
- 1 pound shrimp, peeled and deveined
- 2 tablespoons blackening seasoning
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped
- Cook cavatappi pasta according to package instructions. Drain and set aside.
- In a bowl, toss shrimp with blackening seasoning.
- Heat olive oil in a skillet over medium-high heat.
- Add seasoned shrimp to the skillet and cook until pink and cooked through, about 2-3 minutes per side.
- Add cherry tomatoes and cook for an additional minute.
