Starbucks Pumpkin Cream Cheese Muffins

These Starbucks Pumpkin Cream Cheese Muffins are a delicious homemade version of the popular coffee shop treat.

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/4 teaspoon salt
  • 8 ounces cream cheese
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine pumpkin puree, sugar, brown sugar, vegetable oil, eggs, and vanilla extract.
  3. In another bowl, mix together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  4. Gradually add the dry ingredients to the wet ingredients until just combined.
  5. In a separate bowl, beat cream cheese with powdered sugar until smooth.
  6. Fill each muffin liner halfway with the pumpkin batter, add a teaspoon of cream cheese mixture, then top with more batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For added flavor, consider adding chopped nuts or chocolate chips to the batter.
  • These muffins can also be made with whole wheat flour for a healthier option.
