Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, mix the coconut milk, eggs, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Fold in the shredded coconut gently.
  5. Heat a non-stick skillet over medium heat and pour 1/4 cup of the batter for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve with syrup and additional coconut if desired.
