Sweet Potato & Cranberry Gratin

A comforting and festive dish combining sweet potatoes and cranberries, perfect for gatherings.

Ingredients

  • 2 pounds sweet potatoes
  • 1 cup fresh cranberries
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup grated cheddar cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and slice the sweet potatoes into thin rounds.
  3. In a greased baking dish, layer half of the sweet potato slices.
  4. Sprinkle half of the cranberries over the potatoes.
  5. In a bowl, mix the cream, vanilla, brown sugar, cinnamon, nutmeg, and salt. Pour half of this mixture over the layers.
  6. Repeat the layering with the remaining sweet potatoes, cranberries, and cream mixture.
  7. Top with grated cheddar cheese.
  8. Bake for 45-55 minutes, or until the sweet potatoes are tender and the top is golden brown.

Notes

  • For added flavor, you can sprinkle some chopped nuts on top before baking.
