Traditional Moroccan Chicken Tagine

  • 4 chicken legs
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 2 cups chicken broth
  • 1 cup dried apricots, chopped
  • 1/2 cup honey
  • salt to taste
  • pepper to taste
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat olive oil in a tagine or large pot over medium heat.
  2. Add the chicken legs and brown them on all sides.
  3. Remove the chicken and set aside.
  4. Add onions and garlic to the pot, sauté until softened.
  5. Stir in the spices: cumin, cinnamon, and paprika.
  6. Add the chicken back into the pot along with chickpeas, broth, apricots, and honey.
  7. Season with salt and pepper.
  8. Cover and simmer for about 45 minutes until chicken is tender.
  9. Garnish with fresh cilantro before serving.
