Twice Baked Breakfast Potatoes

A delicious and hearty breakfast dish featuring twice baked potatoes filled with turkey bacon and cheese.

Ingredients

  • 4 medium-sized russet potatoes
  • 6 slices turkey bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork. Bake for about 45-60 minutes until tender.
  3. In a skillet, cook the turkey bacon until crispy, then crumble it.
  4. Once potatoes are cool, slice them in half and scoop out the insides into a bowl, leaving a small border.
  5. Mix potato insides with sour cream, cheese, bacon, green onions, garlic powder, salt, and pepper.
  6. Fill potato skins with the mixture and top with remaining cheese.
  7. Bake for an additional 15 minutes until cheese is melted and bubbly.

Notes

  • For a spicier version, add jalapeños to the filling mixture.
  • Can be made ahead and reheated for an easy breakfast option.
