- 2 cups white beans, soaked overnight
- 4 strips turkey bacon, chopped
- 1 onion, chopped
- 2 carrots, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cups kale, chopped
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Add onion and carrots to the pot, sauté until soft.
- Stir in garlic and sauté for another minute.
- Add soaked beans, chicken broth, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for about 1 hour or until beans are tender.
- Stir in kale and the cooked turkey bacon, cook for an additional 5 minutes.
- Serve warm.
