White Bean Soup with Bacon

A delicious and hearty white bean soup with turkey bacon that’s perfect for a comforting meal.

Ingredients

  • 2 cups white beans, soaked overnight
  • 4 strips turkey bacon, chopped
  • 1 onion, chopped
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups kale, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add onion and carrots to the pot, sauté until soft.
  3. Stir in garlic and sauté for another minute.
  4. Add soaked beans, chicken broth, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for about 1 hour or until beans are tender.
  6. Stir in kale and the cooked turkey bacon, cook for an additional 5 minutes.
  7. Serve warm.

Notes

  • This soup can be frozen for up to 3 months.
