Wonderful Coffee Cake Muffins

Delicious and easy to bake, these Wonderful Coffee Cake Muffins are perfect for breakfast or brunch.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sour cream
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix sour cream, vegetable oil, egg, and vanilla until well combined.
  4. Combine wet ingredients with the dry ingredients and stir until just combined.
  5. Fold in chopped nuts if using.
  6. Fill muffin cups about 2/3 full with the batter.
  7. In a small bowl, mix together cinnamon and a tablespoon of sugar to create a topping. Sprinkle it over the muffin batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Allow to cool for a few minutes in the pan before transferring to a wire rack to cool completely.

Notes

  • For a sweeter muffin, add more sugar to the batter.
  • Try adding blueberries or chocolate chips for a twist.
