- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sour cream
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 cup chopped walnuts or pecans (optional)
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
- In another bowl, mix sour cream, vegetable oil, egg, and vanilla until well combined.
- Combine wet ingredients with the dry ingredients and stir until just combined.
- Fold in chopped nuts if using.
- Fill muffin cups about 2/3 full with the batter.
- In a small bowl, mix together cinnamon and a tablespoon of sugar to create a topping. Sprinkle it over the muffin batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool for a few minutes in the pan before transferring to a wire rack to cool completely.
