Budae Jjigae, also known as Korean Army Stew, is a comforting and hearty dish combining various ingredients, perfect for cold days.

Ingredients

  • 1 tablespoon vegetable oil
  • 4 ounces turkey bacon, chopped
  • 4 ounces chicken ham, sliced
  • 1 cup kimchi, chopped
  • 1 cup tofu, cubed
  • 2 cups chicken broth
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon gochugaru (Korean chili flakes)
  • 1 cup instant ramen noodles
  • 2 green onions, sliced
  • 1 cup mushrooms, sliced

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the turkey bacon and chicken ham, cooking until browned.
  3. Stir in the kimchi and tofu, cooking for another 2 minutes.
  4. Pour in the chicken broth, followed by gochujang and gochugaru.
  5. Bring to a simmer and add the ramen noodles, cooking until tender.
  6. Top with green onions and mushrooms before serving.

Notes

  • For a spicier version, increase the amount of gochujang and gochugaru.
  • Feel free to add other ingredients like corn or baked beans for variety.
