  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups carrots, diced
  • 2 cups celery, diced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups frozen peas
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
  2. Add onion and garlic to the pot and sauté until translucent.
  3. Stir in the carrots and celery; cook for 5 minutes.
  4. Add chicken broth and bring to a boil.
  5. Once boiling, reduce heat and add shredded chicken, frozen peas, and spices.
  6. Simmer for 10 minutes; add heavy cream and stir well.
  7. Garnish with chopped parsley and serve hot.
