  • 1 teaspoon vanilla extract
  • ½ cup coconut milk

Instructions

  1. Preheat the oven to 350°F (175°C). Line a cupcake pan with liners.
  2. In a bowl, combine the flour, sugar, coconut, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter until light and fluffy. Add eggs one at a time, mixing well.
  4. Stir in the vanilla and coconut milk.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Divide the batter among the cupcake liners.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool before frosting.
