Creamy Lasagna Soup

A delicious and comforting twist on traditional lasagna, this creamy lasagna soup recipe is perfect for cozy nights.

  • 1 pound Italian sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 12 ounces lasagna noodles, broken
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot, brown the Italian sausage over medium heat.
  2. Add the diced onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the crushed tomatoes, chicken broth, and Italian seasoning.
  4. Add the broken lasagna noodles and let simmer for 20 minutes.
  5. Just before serving, stir in the ricotta and mozzarella cheeses until melted and creamy.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh basil and serve hot.

Notes

  • This soup can be made ahead and stored in the fridge.
  • For a vegetarian version, substitute the sausage with mushrooms.
