  • 8 ounces rotel diced tomatoes with green chilies
  • 12 ounces pasta
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until translucent.
  2. Add ground beef to the skillet, cooking until browned and fully cooked. Drain excess fat.
  3. Stir in the rotel diced tomatoes with green chilies, followed by heavy cream and shredded cheese. Mix until cheese is melted and everything is well combined.
  4. Meanwhile, cook pasta according to package instructions in a separate pot. Drain and add to the meat sauce.
  5. Stir to combine pasta with the sauce, and season with salt and black pepper to taste. Serve warm.
