- 4 bell peppers
- 1 cup cooked rice
- 1 can black beans, drained
- 1 cup corn
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheese
- 2 tablespoons olive oil
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a pan, heat olive oil and sauté the onion and garlic until translucent.
- Add cooked rice, black beans, corn, cumin, and chili powder. Stir well to combine.
- Stuff the mixture into each bell pepper and place in a baking dish.
- Sprinkle shredded cheese on top of each pepper.
- Bake for 25-30 minutes until peppers are tender.
