Easy Vegetarian Stuffed Bell Peppers with Rice

A delightful dish featuring delicious vegetarian stuffed bell peppers filled with rice and other tasty ingredients.

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 can black beans, drained
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a pan, heat olive oil and sauté the onion and garlic until translucent.
  4. Add cooked rice, black beans, corn, cumin, and chili powder. Stir well to combine.
  5. Stuff the mixture into each bell pepper and place in a baking dish.
  6. Sprinkle shredded cheese on top of each pepper.
  7. Bake for 25-30 minutes until peppers are tender.
