  • 4 bell peppers
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 cup shredded cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a large bowl, combine cooked rice, black beans, corn, diced tomatoes, chili powder, and cumin.
  4. Stuff each bell pepper with the rice mixture and place in a baking dish.
  5. Top with shredded cheese.
  6. Bake for 25-30 minutes until the peppers are tender.
