Honey Peach Cream Cheese Cupcakes That Scream Summer Delight

A delightful summer treat combining the sweetness of honey and peaches with creamy frosting.

  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup cream cheese, softened
  • 1/4 cup honey
  • 1 cup fresh peaches, diced
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Mix in the cream cheese, honey, and vanilla extract until smooth.
  5. In a separate bowl, combine the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in the diced peaches.
  8. Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Let cool completely before frosting.

Notes

  • For an extra touch, add a peach slice on top of each cupcake.
  • Store any leftover cupcakes in an airtight container.
