- 1 cup granulated sugar
- ½ cup unsalted butter, melted
- 2 large eggs
- 1 cup buttermilk
- 2 tablespoons poppy seeds
- 2 tablespoons lemon zest
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the melted butter, eggs, buttermilk, lemon zest, and poppy seeds.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fill muffin liners about ¾ full and bake for 18-20 minutes, or until a toothpick comes out clean.
