  • 1 cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 cup buttermilk
  • 2 tablespoons poppy seeds
  • 2 tablespoons lemon zest
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the melted butter, eggs, buttermilk, lemon zest, and poppy seeds.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fill muffin liners about ¾ full and bake for 18-20 minutes, or until a toothpick comes out clean.
  6. Allow to cool for a few minutes before transferring to a wire rack.
