Ingredients

  • 8 ounces elbow macaroni
  • 1 can corn, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1 cup cotija cheese, crumbled
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt to taste

Instructions

  1. Cook the macaroni according to package instructions. Drain and let cool.
  2. In a large bowl, combine corn, tomatoes, red onion, cilantro, and cotija cheese.
  3. Add the cooled macaroni to the bowl and mix well.
  4. In a small bowl, whisk together mayonnaise, lime juice, chili powder, and salt.
  5. Pour the dressing over the pasta salad and toss to coat.
  6. Chill in the refrigerator for at least 30 minutes before serving.
