Instructions

  1. In a pot, bring water to a boil and cook the sago pearls until they become transparent, about 30 minutes.
  2. Drain and rinse the sago pearls under cold water.
  3. In a separate pot, combine coconut milk, sugar, and vanilla extract, heating gently.
  4. Once the sugar has dissolved, stir in the matcha powder until well combined.
  5. Mix the cooked sago pearls into the coconut matcha mixture.
  6. Fold in the diced strawberries, reserving some for garnish.
  7. Chill in the refrigerator for at least one hour before serving.
  8. Serve in bowls, garnished with additional strawberries.
