Vegan Banana Muffins

Delicious and easy vegan banana muffins perfect for healthy snacking.

  • 3 ripe bananas
  • 1/3 cup melted coconut oil
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup whole wheat flour
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the bananas using a fork.
  3. Add melted coconut oil, sugar, and vanilla extract to the mashed bananas and mix well.
  4. Sprinkle the baking soda and salt over the mixture and stir to combine.
  5. Gradually add the flour and mix until just incorporated. Fold in walnuts if using.
  6. Pour the batter into a lined muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

  • For added moisture, you can include a tablespoon of plant-based yogurt.
  • Store muffins in an airtight container for up to 3 days.
