Vegan Peanut Butter Mousse (with a Chocolate Ganache!)

A delightful vegan dessert that combines creamy peanut butter mousse with a rich chocolate ganache.

Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup coconut cream
  • 1/2 cup dark chocolate chips
  • 2 tablespoons almond milk

Instructions

  1. In a mixing bowl, combine the peanut butter, powdered sugar, and vanilla extract until smooth.
  2. In another bowl, whip the coconut cream until fluffy and fold it into the peanut butter mixture.
  3. Pour the mixture into serving glasses and refrigerate for at least 2 hours.
  4. Melt the dark chocolate chips with almond milk over a double boiler until smooth.
  5. When ready to serve, drizzle the chocolate ganache over the chilled mousse.

Notes

  • For a sweeter mousse, adjust the amount of powdered sugar to taste.
  • This dessert is best served chilled.
