  • 2 cups chicken broth
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 8 ounces cream cheese
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese, optional for topping
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, combine chicken, broth, white beans, green chiles, onion, garlic, cumin, and chili powder.
  2. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Add cream cheese and stir until melted and incorporated.
  4. Stir in corn and cook for another 5 minutes.
